Job Description

The Distiller will work closely with the production team and is responsible for the safe, efficient, and quality production of spirits at Laws Whiskey House. The best person for this role should be passionate about whiskey, have a diverse set of distillation related skills, a rapport within a team environment and have solid leadership qualities. Role and Responsibilities

· Daily operations include: Milling, mashing, yeast prep, managing fermentation, distillation, waste management, transferring spirit, barreling and record keeping.

· Operate stills as directed and instructed: fill, heat and run one or more stills simultaneously and safely.

· Operate brewing equipment as directed and instructed: successfully mash and ferment whiskey washes and other ferments as necessary, CIP of all process equipment.

· Accurately transfer liquids and complete batch records for all spirits.

· Store, blend, gauge and proof, and barrel finished spirits.

· Understand and implement various compliance requirements for recordkeeping and filing, meeting all state and federal regulations associated with the facility and its products.

· Reporting and presenting production results to production team.

· Attend and participate in sensory panel meetings; learn spirits-specific sensory evaluation process.

· Filling silos and grain management.

· Assist with bottling, receiving, shipping and other duties as needed.

· Ensure cleanliness and organization in the production and storage areas.

· Ensure that all production equipment (electrical, pumps, boiler, stills, fermenters and tanks, material, and liquid handling) is maintained as directed in SOPs.

Qualifications and Requirements

· Professional experience in brewing/distilling. Or Education in Brewing/Fermentation Science.

· Ability to work a rotating shift schedule requiring evening/weekend duties.

· Ability to lift at least 50 pounds, work on your feet for extended periods of time and move quickly and

efficiently.

· Dedication to safety.

· Proficiency with forklift.

· Demonstrated mechanical and problem-solving abilities.

· Goal oriented, accountable and personable.

· Dedication to accuracy, protocols and efficient systems.

· Proficiency with Microsoft Office applications and general computer skills.

· An ability to work around and consume alcohol in a responsible manner.

Compensation

Salary: $49,000/year
